HACCP, ISO 22000 and GMP: what they mean for your food supply

Three certifications come up whenever you choose a food distributor. Here is what each one covers, how they fit together, and the questions worth asking before you sign.

When you choose a food distributor, you are trusting them with more than delivery dates. Every carton spends time in their warehouse and their trucks before it reaches your shelf or your kitchen, and any lapse there becomes your problem. That is why three sets of letters come up in almost every supplier conversation: HACCP, ISO 22000 and GMP.

HACCP: find the risks, then control them

HACCP stands for Hazard Analysis and Critical Control Points. It is a method, not a checklist. A business maps every step a product goes through, identifies where something could go wrong (bacteria, contamination, temperature abuse, physical objects), and sets controls at the points where that risk can be stopped.

In a distribution warehouse, critical control points typically include receiving goods, cold storage, picking and loading. Each one has a limit, such as a maximum temperature, a way to monitor it, and a plan for what happens if the limit is crossed.

ISO 22000: a management system around food safety

ISO 22000 is an international standard for food safety management. It builds on HACCP principles and adds the structure around them: documented procedures, clear responsibilities, internal audits, supplier control, traceability and continuous improvement.

Put simply, HACCP tells you where the risks are. ISO 22000 makes sure the whole organisation keeps managing them, year after year, and can prove it.

GMP: the everyday basics

Good Manufacturing Practice, or GMP, covers the conditions that make food safety possible in the first place: clean and well-maintained premises, pest control, staff hygiene and training, proper storage and handling. Without solid GMP, no HACCP plan can work.

How they fit together: GMP is the foundation, HACCP controls the specific hazards, and ISO 22000 is the management system that holds both in place.

Five questions to ask any distributor

  • Which certifications do you hold, and when were you last audited? Ask to see current certificates.
  • How do you control temperature? Ask about storage zones, refrigerated vehicles and how temperatures are logged.
  • How is stock rotated? Short-dated stock should never reach you by surprise.
  • Can you trace a batch? If there is ever a recall, your distributor should be able to tell you quickly where every unit went.
  • How are staff trained? Standards only work when the people on the floor follow them every day.
